Garlic Soup

I wish I could remember the name of the cookbok where I aquired this recipe

For about 3-4 servings you need

2 heads of garlic


Vegetable Stock



Peel the cloves of the 2 heads of garlic and sweat in a pan with a drop of olive oil and some turmeric

Add the vegetable stock (about 900ml or so) and allow to simmer for about 20 minutes.

Leave to cool and then put it in a blender.

Then you have some lovely golden garlic soup.

You can add potato or other veg but don’t expect to taste it.

As the soup is quite watery, use croutons or noodles to give you something to chew on

  3. As you know, I did make garlic soup based on your recipe! My blender has been used to make paper, and can no longer be used for food. ;-P So I roasted the garlic first, which makes it easy to mash up with a fork, and it was fabulous! It freezes well, too. Thank you, Simon. A wonderful recipe.
